The capital of Puglia has always known how to make the most of fish, fresh produce and durum wheat. We wander through Bari in search of its most representative dishes, celebrating a culinary tradition rooted in humble origins.
Set in a Victorian corner house in Islington, this bakery serves homemade pastries, sandwiches, coffee, ice cream and house-made kombucha.



Housed in a former 17th-century deconsecrated church, this bakery, with its vaulted ceilings and stone walls, is renowned for its focaccia barese: crisp around the edges, soft and juicy inside, and topped with confit tomatoes, olives and olive oil. Its wood-fired oven gives it a distinctive smoky finish.



It revives the essence of authentic, rustic Puglian cuisine using locally sourced, artisan-produced ingredients. Its concise menu changes almost daily and celebrates Bari’s traditional food, from meat and cured meats to local vegetables, fresh pasta and wine.



The name of this urban osteria refers to its speciality: Spaghetti all'Assassina, one of Bari’s most iconic dishes. The pasta is toasted directly in the pan before a spicy tomato broth is added, creating a crisp, golden finish.
