Have you ever seen such a beautiful lemonade? And not only that, but it’s delicious. But what is pea flower? This infusion is rich in antioxidants, which makes it an excellent drink to include in your detox diet, especially in summer. Drinking a cup of blue tea once or twice a week on an empty stomach flushes accumulated toxins from the system and greatly improves digestive health. The earthy flavour of butterfly pea flower tea is said to improve mood as it has anti-stress effects that can also help reduce symptoms of anxiety. All this combined with lemonade makes for the perfect summer drink.

For pea flower tea:

  • 3 cups of water
  • ¾ cups agave syrup
  • ½ pea flower powder

For the lemon juice:

  • 2 cups of sparkling water
  • 1 ½ cups of squeezed lemon juice (8-10 lemons)


  • In a saucepan over medium heat, combine 3 cups of water, the agave syrup and the pea flower powder.
  • Stirring frequently, bring the mixture to a simmer, turn off the heat, cover and leave to stand for more than 10 minutes.
  • Strain the tea and transfer the remaining liquid to a jug in the fridge to cool.
  • Juice the lemons and mix with 2 cups of water.
  • Fill the glasses with ice and add the lemon juice mixture. Then add the chilled pea flower tea mixture and watch the magic happen.
  • Stir the drink and enjoy.
