A star dish for all curry lovers who don’t have the time or space to prepare it at home. Don’t worry, this recipe means you can eat curry as often as you like in the comfort of your own home.

Ingredients

  • 1 garlic
  • ½ onion
  • 2 tablespoons of Extra Virgin Olive Oil
  • 500 g aubergine cut into small pieces
  • 1 tin of coconut milk
  • 1 tablespoon of green curry paste
  • 1/2 cup of vegetable stock
  • 2 courgettes cut into 1cm slices
  • Basmati rice as an accompaniment

Instructions

  • Add the two tablespoons of oil and finely chopped garlic and onion to the rice cooker bowl. Then add the aubergine and courgette.
  • Set to “Quick cook” and leave the vegetables to fry lightly.
  • Once cooked, add the curry paste and stir for two minutes on the “Quick cook” setting.
  • Add the coconut milk and the stock and let the “Quick cook” programme finish.
  • Serve with lime wedges and Basmati rice.
