Stuffed aubergines with quinoa and vegetables

If you want a very complete stuffed aubergine recipe, this is the one for you. Aubergine is a very diuretic food rich in antioxidants, and if we also accompany it with a cereal such as rice, a great source of energy, and add a source of protein, we have a perfectly balanced dish.

Ingredients

  • 300 g royal quinoa (raw)
  • 2 aubergine
  • 1 medium red pepper
  • 2 sticks celery
  • 1 carrot
  • 1/2 onion
  • turmeric (to taste)
  • garlic powder (to taste)
  • basil (to taste)
  • 75 g vegan grated cheese

Instructions

  • First of all, you should wash the quinoa before cooking to remove the saponin unless the manufacturer states that it is already clean. Rinse for a few seconds under cold running water.
  • Place one litre of water in the jug of the food processor. Place the quinoa in the food separator basket. Cook for 20 minutes at 110 degrees speed 2. Once boiled, remove the basket, drain the quinoa and set aside.
  • Add a little water to fry the vegetables in the glass, programming 1 minute at 110 degrees speed 1. Once hot, add the red pepper, celery, carrot and onion, previously diced.
  • Cook the vegetables for 4 minutes at 110 degrees, speed 1. If you want, you can cook them with EVOO (it will be much more caloric). If you do it with water, add it little by little through the lid so that the vegetables do not stick together.
  • While the vegetables are cooking, cut the aubergines in half, cut them crosswise and cook them in the microwave at maximum power for 10 minutes.
  • When the aubergine is ready, scoop out the flesh with a spoon, reserving the skin, and add it to the food processor along with the rest of the vegetables. This is also the time to add the spices: turmeric, garlic powder and basil to taste. Stir everything with the food pusher. Cook for a further 3 minutes at 110 degrees speed 1.
  • Once cooked, add the quinoa to the vegetables in the glass for a further 1 minute. Shape previously so that everything is mixed together.
  • Spoon the mixture into the aubergine skin and ready to serve!
