Ingredients
- 500 ml heavy cream
- 80 g sugar
- 4 gelatin sheets
- 100 g caramel sauce
- 1 teaspoon flaky salt
- Small meringues
- Red berries for decoration
Instructions
- Soak the gelatin in cold water.
- Heat the cream with the sugar in the Chefbot at 85ºC for 5 minutes on speed 1 using the stirring attachment.
- Insert the blade, add the drained gelatine and mix for 20 seconds on speed 4.
- Add the caramel and salt and mix again on speed 4.
- Pour into moulds and refrigerate for 4 hours.
- Serve with meringues and fresh red berries.
