Minestrone is a humble but very tasty soup, perfect to adapt to the contents of our fridge and reuse that handful of spinach or green beans (or that half a courgette or pepper left over from a sofrito) with guaranteed success. Although the basis of this recipe is a combination of vegetables, pasta and legumes, we can add chopped cooked chicken pieces (perfect for giving a second life to that leftover breast from the roast chicken), cubes of bacon or pancetta or one egg per serving, which we can add five minutes before the pasta is finished cooking. We can prepare our own grated or powdered cheese in our Chefbot, using the slicer disc or the blade accessory.

Ingredients
- 1.2 l of chicken, meat or vegetable broth (to taste) at room temperature
- 1 medium onion (about 150 g)
- 2 tablespoons of olive oil (30 ml)
- 2 medium sized carrots (about 140 g)
- 80 g of soup paste
- 200 g cooked vegetables (beans, chickpeas, lentils…)
- handful of spinach leaves (about 50 g)
- Grated cheese to taste
- Salt
- Pepper
- Lemon juice to taste (optional)
Instructions
- Peel the onion and cut it into quarters. Wash the carrots well, remove the tip and any imperfections and chop them up. Place the blade accessory in the Chefbot’s glass, program 10 seconds at speed 6 and close.
- Open the Chefbot, remove the blade accessory and insert the stir paddle accessory. Add the 30 ml of olive oil and a pinch of salt. Program 12 minutes at 110℃, speed 1 and close.
- Open the Chefbot and add the broth. Program 12 minutes at 120℃, speed 1 and close.
- Open the Chefbot, add the 80 g of soup paste and 200 g of cooked vegetables to taste and add salt to taste. Set the time recommended by the manufacturer for cooking the pasta to 110℃, speed 1 and close.
- Open the Chefbot and add the 50 g of spinach, leaving it to rest for 5 minutes so that it loses its strength with the residual heat. Serve the soup with grated cheese, a touch of pepper and, if desired, a few drops of lemon juice.
