These energy balls have a similar consistency to chocolate truffles, are vegan and healthier as they contain no added sugar. They are perfect as a dessert, snack or post-workout snack. If you want to make more, you can double the recipe and store the balls in an airtight container in the fridge. They keep for several days and are the perfect sweet treat.

  • 100 g Dates
  • 40 g Coconut milk (from a can 3 tablespoons (40 g))
  • 4 teaspoons Pure cocoa powder (25 g)
  • 2 teaspoons Maple syrup (15 g)
  • 2 teaspoons Coconut flour (20 g)
  • 1 teaspoon Vanilla essence
  • 2 teaspoons Beetroot powder

Instructions

  • Before preparing the recipe, it is advisable to put the can of coconut milk in the refrigerator for at least an hour. To obtain a creamy texture, use only 3 tablespoons of the white part that settles on the surface of the can.
  • First, pit the dates and put the 100 grams into the cup of the machine.
  • Insert the blade attachment.
  • To chop the dates first, programme 10 seconds on speed 6.
  • Now you can add the rest of the ingredients in the recipe, including the coconut milk, to the mixing jar.
  • Programme 45 seconds at level 3.
  • Use the spatula to remove anything stuck to the sides of the glass.
  • Press the dough all the way down with the spatula and programme it again for 20 seconds at level 5.
  • Remove the knife and transfer the dough to a plate or bowl.
  • If you have time, let the dough chill in the fridge for about 10 minutes before shaping balls into the desired size. If not, you can make balls immediately, but if it is very hot, it might be a bit difficult.
  • Finally, you can coat the balls with pure cocoa.
