PASTA STUFFED WITH PEARS, BLUE CHEESE AND WALNUTS

Preparing pasta with the little ones at home is one of the most fun tasks we can do this holiday season. Even more so if we somehow or other introduce vegetables that they don’t usually like to give them not only a touch of colour but also a touch of health!

Ingredients

Recipe per person

  • 100 gr Flour
  • 1 egg
  • 1 pinch of salt
  • EVOO

For the filling

  • 100 gr blue cheese
  • 50 gr of walnuts
  • 1 pear

Instructions

For pasta:

  • Pour the flour, egg, salt and a dash of EVOO into the bowl of the Downmix and mix with the dough hook on speed 3 for 10 minutes.
  • Once all the ingredients have been integrated, wrap the dough in cling film and leave it to rest for 20 minutes in the fridge.

For the filling:

  • Put some EVOO or butter in a frying pan and let it heat up. Once it is hot, add the diced pear with a pinch of salt so that it begins to brown (the idea is that it browns but does not soften too much).
  • Mix the blue cheese, pear and walnuts in a bowl.

To prepare the bonbons

  • Roll out the dough with a rolling pin on a flat surface and cut it into 9 cm wide slices. Pass the dough sheets through the dough cutter, starting at thickness 8 and working your way up to thickness 1.
  • Repeat the process, always flouring the surface and the sheets until all the dough is in thin sheets.
  • Place our filling on one of the plates, leaving a distance of 4 fingers between the fillings.
  • Place another plate on top and cut squares with a ravioli cutter.
  • Then we mark the filling on top of the dough and squeeze the ends of the dough to form small “bonbons”.
  • Cook in boiling salted water for 2 minutes and serve with toasted butter and some parmesan cheese.
