Crispy, golden, and with a finish that recalls traditional fried panzerotti, but made easily in the Air Fryer. The mushroom, ricotta, and mozzarella filling turns deliciously creamy and melted on the inside, while the dough develops a thin, crunchy crust.

Ingredients
For the dough:
- 250 g strong white bread flour
- 125 ml lukewarm water
- 5 g fast-action dried yeast
- 1 tbsp olive oil
- ½ tsp salt
For the filling:
- 150 g mixed mushrooms
- 150 g ricotta
- 100 g mozzarella
- 1 garlic clove
- 1 tbsp olive oil
- Salt
- Black pepper
- Oregano
To finish:
- 1 egg
- 2 tbsp olive oil
- 1 pinch of salt
Instructions
- Start by making the dough. In a bowl, mix the flour, yeast, and salt. Gradually add the lukewarm water and olive oil, and knead until you get a smooth, elastic dough.
- Shape into a ball, place in a lightly greased bowl, and cover with a tea towel. Leave to rise for about 1 hour until doubled in size.
- Meanwhile, prepare the filling. Chop the mushrooms into small pieces and sauté in a frying pan with a drizzle of olive oil and the minced garlic. Season with salt, pepper, and a pinch of oregano, cooking until all released liquid has evaporated. Leave to cool.
- Mix the cooled mushrooms with the ricotta and finely chopped mozzarella.
- Once the dough has rested, divide it into four equal portions and roll each one out into a thin circle.
- Place the filling in the centre, leaving the edges clear. Fold the dough over into a half-moon shape and seal the edges firmly using your fingers or a fork.
- To achieve a finish reminiscent of fried panzerotti, whisk the egg with the olive oil and brush generously over the entire surface of the panzerotti, ensuring no dry dough remains. This step is key for a golden, glossy, and crunchy finish.
- Place the panzerotti into the Air Fryer Crystal basket, leaving space between them.
- Select “Bake”, set to 200 °C, and cook for 12–14 minutes. Halfway through cooking, open the basket, brush lightly again with the egg and oil mixture, and continue cooking until golden brown.
- Once ready, let them rest for 2–3 minutes before serving.
