Blinis with truffled cheese, honey and salmon

Blinis are a type of small pancake that can be eaten with either sweet or savoury foods. They are said to be of Slavic origin, although they are eaten in northern Europe and Russia as a canapé. This appetizer is perfect as a Christmas canapé. The flavour of the blinis should be mild and leave the main character to what you put on top, which can be as sophisticated as caviar or other tasty combinations such as truffled cheese, honey and salmon.

Ingredients

For the blinis

  • 1 egg
  • 1 plain yoghurt (125 g)
  • ½ sachet of baking powder (8 g)
  • Flour 75 g
  • Pinch of salt

For the filling

  • Cream of goat’s curd cheese 150 g
  • 1 tablespoon truffled oil
  • 1 tablespoon of honey
  • Sliced smoked salmon 120 g

Instructions

For the blinis

  • Place the blade accessory in the glass of the Chefbot.
  • Add 1 egg, 1 natural yoghurt, ½ sachet of baking powder, 75 grams of sifted flour and a pinch of salt.
  • Program 30 seconds on speed 2 to combine all the ingredients.
  • Place a non-stick frying pan on the heat and, using a ladle or spoon, form small circles approximately 2.5 cm in diameter.
  • Make the blinis until you see small bubbles and carefully turn them over with a spatula to finish cooking on the other side. Once cooked, leave to cool and set aside.

For the filling

  • Place the stir paddle accessory in the glass of the Chefbot.
  • Add 150 g of creamy goat’s cheese (can be replaced by goat’s cheese with a little cream), a tablespoon of truffle oil (can be replaced by truffle paste or grated natural truffle) and a tablespoon of honey.
  • Program 30 seconds on speed 2 to combine all the ingredients.
  • Cut the smoked salmon into small pieces with a knife, discarding the darker part.
  • Assemble the blinis with a little of the honey truffled cheese cream and a small piece of salmon.
