Making biscuits is one of the easiest ways to make homemade pastries. These biscuits are characterised by their intense lemon flavour and their crackled surface. This effect is achieved by coating them with icing sugar before baking.
As a trick you can add a pinch of yellow colouring to intensify the colour of the lemon.

Ingredients
- 50 g sugar
- 30 g butter
- 1 lemon
- 1 medium egg
- 160 g pastry flour
- 1 teaspoon baking powder
- 1 pinch of salt
Instructions
- Open the glass of the Chefbot and insert the blades. Add 50 g sugar and the zest of one lemon. Put the lid on and set on speed 8 for 20″.
- Remove the lid and add 30 g of butter. Close and program on speed 3 for 1′.
- Open the mixing bowl and add one egg and the juice of one lemon. Put the lid on and program for 1′ on speed 3.
- Remove the lid and add 160 g of baking flour, ½ tsp of baking powder and ¼ teaspoon of salt, all previously sieved. Close the lid and programme for 1′ 30″ on speed 2.
- Remove the dough from the mixing bowl and roll into a ball, wrap in cling film and leave to rest in the fridge for at least 1 hour.
- When it is time to make the biscuits, take out the dough and make 10 equal balls. Put 50 g of normal sugar in one bowl and 50 g of icing sugar in another. Roll each ball first in the normal sugar and then in the icing sugar.
- Place the biscuit balls on a baking tray with parchment paper, preheat the oven and bake for 14′ at 180º C.
