Crispy on the outside and soft on the inside, these homemade falafel are a burst of spices and fresh herbs. Perfect with sauces or tucked inside pita bread.

Ingredients
- 250 g dried chickpeas
- 2 garlic cloves
- 1 onion
- 15 g cilantro
- 20 g parsley
- 6 tbsp olive oil
- 2 tsp cumin
- 1 tsp sesame seeds
- 1 tsp salt
Instructions
- Soak the chickpeas in water for at least 12 hours.
- Peel the onion and garlic. Cut the onion into quarters and blend together with the chickpeas. Add cilantro, parsley, olive oil, cumin, and salt, blending into a smooth mixture.
- Transfer the mixture to a bowl, press it down firmly, cover with cling film, and refrigerate for about 1 hour.
- Preheat the air fryer to 190°C.
- Scoop portions with a tablespoon, form into flattened balls, and place them in the basket. Cook for about 20 minutes at 190°C, flipping halfway through.
