If I had to choose a dish that transports me to my grandmother’s house and is the most comforting dish, this would be it.
Ingredients
- 400 g Potato (diced)
- 300 g Carrot cut into slices
- 1 clove Garlic
- 1/2 onion
- 300 g Chorizo spicy sausage
- 200 g Crushed tomato
- 200 g Vegetable stock
- 1 jar of boiled chickpeas
- Bay leaf
- EVOO
Instructions
- In a saucepan put plenty of olive oil, the chopped garlic and the onion cut into small pieces. Over a medium low heat, fry until the onion starts to become translucent. Add the sliced spicy chorizo sausage and two tablespoons of the tomato sauce and sauté.
- Add the diced potatoes and the sliced carrot and the vegetable stock.
- Cook for about 20 minutes on a medium high heat and add the remaining crushed tomato.
- Correct salt and add bay leaf and cooked canned chickpeas.
- Leave to cook for 5 minutes and serve
