Cream of pumpkin and roasted onion with paprika and its seeds

The pumpkin, with that unfair reputation of healthy but bland food on its back, has a lot to offer if we treat it as it deserves. The easiest way to check that this is true is to turn on the oven and put inside a violin pumpkin cut in half or lengthwise. In just over an hour, depending on the size of the pumpkin in question, the whole kitchen will smell of glory and we will get a marvel with a slightly toasted aroma. With just a few spoonfuls of beaten yogurt, some aromatic herbs, salt and pepper and, if we want, some chopped up nuts, we will have a real delicacy. This cream takes advantage of all the essence of roasted pumpkin.

Ingredients

  • 800 g pumpkin
  • 2 medium onions (about 300 g)
  • 2 carrots (about 140 g)
  • 1 l of vegetable or chicken broth
  • 3 tablespoons of olive oil (45 ml)
  • 1 natural (normal or Greek yoghurt (125g))
  • Salt
  • Pepper
  • Pumpkin seeds to taste
  • Chili powder
  • 1 pinch of saffron threads (optional)

Instructions

  • Turn on the oven at 180℃. Remove the skin from the 800 pumpkin and onions, and cut the onions into eight, the pumpkin into pieces of about three centimetres and the carrots into four pieces.
  • Prepare a baking tray lined with baking paper and spread the vegetables on top. Dress with the 45 ml of olive oil, salt and pepper to taste. Bake for about 30 minutes, or until tender and slightly browned (not too much, so they don’t dry out), stirring every 10 minutes.
  • Place the stir paddle accessory in the Chefbot’s glass. Add the roasted vegetables, 1 l of vegetable or chicken stock and, if desired, a pinch of saffron strands. Program 20 minutes to 120℃, speed 1 and close.
  • Open the glass of the Chefbot and, when it can be done without burning, remove the stir paddle accessory and add the blade accessory. Add the Greek yoghurt and pepper. Set 1 minute at speed 8 and close.
  • Open the Chefbot’s glass and taste the cream, taking care not to burn yourself. Adjust the salt and pepper, if necessary. Set 1 minute at speed 10 and close.
  • Open the glass of the Chefbot and serve with pumpkin seeds as topping and, if desired, a little chili powder.
