We bring you one of our favourite desserts: carrot cake. What’s so special about it? We’re making it in the Fryer Air. This cake is a classic that never lets you down. It’s a simple and quick recipe that you can prepare for any occasion.

Ingredients

For the cake:

  • 80 g pitted and soaked dates
  • 90 g coconut oil or ghee.
  • 2 eggs.
  • 120 g peeled and grated carrots.
  • 90 g oat flour.
  • One teaspoon of baking powder.
  • One teaspoon cinnamon powder
  • 1/2 teaspoon baking soda.
  • Pecans or regular walnuts to taste.

For the frosting:

  • 150 g mascarpone cheese
  • Juice of one large lemon
  • 30 g erythritol

Instructions

For the cake:

  • Soak the dates for 10 minutes in boiling water
  • After this, mix the pitted dates with the coconut oil. Beat the mixture.
  • Add the eggs one at a time and beat. When everything is mixed in, add the carrots
  • Add the remaining dry ingredients: oat flour, baking powder, baking soda and cinnamon.
  • Press a few walnuts into the batter.
  • Preheat the air fryer for two minutes at 180°.
  • After this time, add the batter to a small, disposable, aluminium baking mould that’s suitable for the fryer.
  • Cook in the air fryer at 180° for 18 minutes.

For the frosting:

  • Mix the 3 ingredients together and beat vigorously.
  • Finally, remove the cake from the fryer and decorate the top with the frosting.
  • Enjoy!
