We bring you one of our favourite desserts: carrot cake. What’s so special about it? We’re making it in the Fryer Air. This cake is a classic that never lets you down. It’s a simple and quick recipe that you can prepare for any occasion.

Ingredients
For the cake:
- 80 g pitted and soaked dates
- 90 g coconut oil or ghee.
- 2 eggs.
- 120 g peeled and grated carrots.
- 90 g oat flour.
- One teaspoon of baking powder.
- One teaspoon cinnamon powder
- 1/2 teaspoon baking soda.
- Pecans or regular walnuts to taste.
For the frosting:
- 150 g mascarpone cheese
- Juice of one large lemon
- 30 g erythritol
Instructions
For the cake:
- Soak the dates for 10 minutes in boiling water
- After this, mix the pitted dates with the coconut oil. Beat the mixture.
- Add the eggs one at a time and beat. When everything is mixed in, add the carrots
- Add the remaining dry ingredients: oat flour, baking powder, baking soda and cinnamon.
- Press a few walnuts into the batter.
- Preheat the air fryer for two minutes at 180°.
- After this time, add the batter to a small, disposable, aluminium baking mould that’s suitable for the fryer.
- Cook in the air fryer at 180° for 18 minutes.
For the frosting:
- Mix the 3 ingredients together and beat vigorously.
- Finally, remove the cake from the fryer and decorate the top with the frosting.
