Tomato and Coconut Soup

A unique and surprising recipe, packed with flavoursome tomatoes and a touch of coconut. Serve hot or cold, depending on the time of year. A combination of flavours that will make this tomato soup taste delicious.

Ingredients

  • Sweet onion 1 (200g)
  • Courgette 1 (250g)
  • Canned whole tomatoes 1 can (drained 600g:)
  • Coconut milk 200ml
  • Garlic powder 1 teaspoon (10g)
  • Cumin powder ½ teaspoon (5g)
  • Baking soda ½ teaspoon (5g)
  • Extra virgin olive oil 3 tablespoons (45ml)
  • Chopped fresh parsley to serve
  • Pepper to taste
  • Salt to taste

Instructions

  • Open the ChefBot, insert the blade accessory and add the peeled and quartered onion and the washed and chopped courgette. Close and blend for 10 seconds at speed 6.
  • Open the Chefbot, switch the blades attachment for the stirrer and use the spatula to scrape down any ingredients stuck to the sides. Then add 45 ml of olive oil. Programme to 120ºC for 10 minutes at speed 1, close and leave the filler cap open.
  • Open the Chefbot, add the 600g of drained canned tomatoes, 200ml of coconut milk, 1 teaspoon of garlic powder, ½ teaspoon of cumin powder, ½ teaspoon of baking soda and salt to taste. Programme to 120ºC for 10 minutes at speed 1 and close. Once this time has elapsed, programme for a further 10 minutes at 80ºC.
  • When the Chefbot cools down, take out the stirring paddle and put in the blade attachment. Programme for 1 minute at speed 12 and close. Open, adjust the salt if necessary, programme for a further 30 seconds at speed 12 and close.
  • Open the Chefbot and pour the sauce into a container using a spatula.
  • Serve warm with a little chopped parsley, ground pepper and olive oil
