We know that batch cooking isn’t for everyone, either because you’re not the world’s best cook or because you just don’t want to spend hours preparing the week’s food. With this recipe we guarantee that you’ll be able to prepare your chicken for the week without even having to put on your apron.

Ingredients

  • 1 kg chicken breasts
  • 1 yellow pepper
  • 1 red pepper
  • 1 green pepper
  • 1 red onion
  • 1 dash of EVOO
  • Fajita seasoning (if you don’t have any, you can mix garlic powder, onion powder, paprika (sweet or hot, depending on taste, salt, pepper and a pinch of cumin))

Instructions

  • Cut the chicken breasts into thin strips and place them in a bowl.
  • To prepare the peppers, remove the tops and cores and cut them into strips about a finger thick. Do the same with all 3 peppers and add them to the bowl as well.
  • Cut the onion into half slices about 3 mm wide and mix them with the previous ingredients.
  • Add a dash of oil and the fajita seasoning.
  • Mix well and pour into the fryer basket
  • Select the chicken programme and leave to cook for 20 minutes at 200°C.
  • Once finished, we can store it in a container and serve it as in the photo, with fajitas, guacamole and coriander, or enjoy it with white rice.
