Cauliflower rice with vegetables

Although we call it cauliflower “rice”, it is actually cauliflower grated to a texture similar to that of rice. If you are not too close to cauliflower, but want to include it in your diet, this is a good way to do it. Thanks to the accompaniment of the vegetables and soy sauce, the taste of the cauliflower is almost imperceptible, while the whole dish is delicious.

Ingredients

  • 500 g cauliflower
  • 100 g onion
  • 100 g carrot
  • 200 g red pepper
  • 30 ml olive oil
  • 60 ml soy sauce
  • Ginger powder 1 teaspoon
  • 20 g fried peanuts
  • Half a lemon
  • Coriander to taste (optional)

Instructions

  • Cut the cauliflower in half and reserve one of the halves, as the grating will be more uniform if it is done in two batches.
  • Cut the half cauliflower into 3 parts.
  • Place the blade accessory in the glass, add the 3 pieces of cauliflower, set at speed 7 for 15 seconds and close.
  • Open the Chefbot’s glass and, using the spatula, transfer the grated cauliflower to a bowl.
  • Repeat the same steps with the other half of the cauliflower.
  • Peel the onion and carrot and set aside.
  • Wash the pepper and cut into 3 pieces.
  • Place the driving shaft and the shred disc in the glass. Close with the food processor lid and use the pusher to shred the onion, carrot and pepper. Program 1 minute at speed 5.
  • Open the Chefbot and replace the shred disc with the stir paddle accessory, add the olive oil and close. Program 4 minutes at 120°C, speed 2.
  • Open the Chefbot, add the reserved cauliflower, set 3 minutes at 120°C, speed 2 and close, leaving the steam outlet cap open.
  • Add the soy sauce and ginger powder, program 1 minute at 120°C, speed 2 and close.
  • Open the Chefbot and, using the spatula, pour into a bowl.
  • If desired, at this point you can stir-fry everything for one minute in a pan with a drizzle of olive oil to give the dish a crunchier feel, although this is optional.
  • Serve, topped off with the fried peanuts, juice and grated half lemon and coriander if desired.
