Broccoli can be a bad memory and even a trauma if, when it was cooked for you in childhood, it was overcooked until a soft, military green thing came to the table. Almost all vegetables in the cabbage family need to be cooked to the point to enjoy their taste, as in this cream. But they are also great raw, cut very fine and seasoned like a salad. To give the preparation a silky feel, we will use avocado, which will add a good dose of healthy fats and we will get a completely vegan dish. To decorate it and give it a crunchy touch, add some cashew nuts, slightly caramelised to the frying pan.
Ingredients
- 1 small broccoli (about 600 g, can be defrosted)
- 2 medium potatoes (about 240 g)
- 1 large onion (about 200 g)
- 4 tablespoons of olive oil (60 ml)
- 1 l of vegetable broth (chicken broth or water at room temperature)
- 2 small avocados (about 240 g)
- Salt
- Pepper
- Za’atar (optional)
- 50 g cashew nuts
- 1 spoonful of sugar (15 g)
Instructions
- Peel the potatoes and cut them into cubes. Peel the onion and chop it up by hand.
- Place the stir paddle accessory in the Chefbot’s glass, add the onion and potato pieces, a little salt and the 60 ml of olive oil. Program 15 minutes at 110℃, speed 1 and close.
- Meanwhile, if you use fresh broccoli, cut it into florets and the stem into thin slices, about 5 mm thick (so that they cook at the same time).
- Open the glass of the Chefbot and add the vegetable broth. Program 6 minutes to 120℃, speed 1 and close.
- When the cycle is over, the broth should be boiling, or about to do so. Open the glass and add the broccoli. Set 10 minutes at 110℃, speed 1 and close.
- Open the glass of the Chefbot and, taking care not to burn yourself, prick one of the pieces of broccoli: if you can get through it easily, it’s ready. If not, program 3 minutes to 110℃, speed 1 and close.
- Meanwhile, put the 15g of sugar in a frying pan over a low heat. When it starts to melt, add the cashew nuts and stir continuously for a couple of minutes (they don’t have to be syrupy, just a little caramelised in some parts).
- Open the glass of the Chefbot and, when you can and carefully so as not to burn yourself, remove the stir paddle accessory and put in the blade accessory. Add the pulp of the two avocados and, if desired, za’atar. Program 1:30 minutes at speed 9 and close.
- Open the glass of the Chefbot and, taking care not to burn yourself, taste the cream. Check if it is missing salt or pepper and, if necessary, add them. Set 1 minute at speed 10 and close. Serve the cream with the coarsely chopped caramelised cashew nuts and, if desired, more za’atar over it.
