POTATO WEDGES WITH PEA AND SAGE PESTO IN AIR FRYER

Crispy on the outside, tender on the inside and served with a smooth, aromatic pesto, these potato wedges are the perfect side dish or a different kind of snack full of flavor.

Ingredients

  • 4 medium potatoes
  • 2 tablespoons olive oil
  • Salt and pepper

For the pesto

  • 150 g peas (fresh or thawed)
  • 1 handful fresh sage leaves
  • 40 g grated Parmesan cheese
  • 30 g nuts (pine nuts or cashews)
  • 4 tablespoons olive oil
  • Salt to taste

Instructions

  • Wash the potatoes and cut them into wedges without peeling them. Mix them with the oil, salt and pepper.
  • Place them in the Air Fryer basket and cook at 190 °C for 20–25 minutes, shaking halfway through cooking.
  • Meanwhile, blend all the pesto ingredients until you obtain a creamy texture. Adjust salt if necessary.
  • Serve the potatoes freshly cooked with the pea and sage pesto.
