Crispy on the outside, tender on the inside and served with a smooth, aromatic pesto, these potato wedges are the perfect side dish or a different kind of snack full of flavor.

Ingredients
- 4 medium potatoes
- 2 tablespoons olive oil
- Salt and pepper
For the pesto
- 150 g peas (fresh or thawed)
- 1 handful fresh sage leaves
- 40 g grated Parmesan cheese
- 30 g nuts (pine nuts or cashews)
- 4 tablespoons olive oil
- Salt to taste
Instructions
- Wash the potatoes and cut them into wedges without peeling them. Mix them with the oil, salt and pepper.
- Place them in the Air Fryer basket and cook at 190 °C for 20–25 minutes, shaking halfway through cooking.
- Meanwhile, blend all the pesto ingredients until you obtain a creamy texture. Adjust salt if necessary.
- Serve the potatoes freshly cooked with the pea and sage pesto.
