Wholemeal spelt peach galette

This rustic tart of French origin is an oven baked recipe, which can be prepared in a sweet or savoury version. This is a healthy version, made with wholemeal flour and sugar and virgin olive oil. You can vary the fruit depending on what is in season at the moment, and of course you can also adjust the amount of sugar.

Ingredients

  • 220 g Wholemeal spelt flour
  • 5 Extra virgin olive oil
  • 100 ml Cold water Quantity
  • 5 tbsp Coconut or panela sugar (divided: 1 for the dough and 4 for the filling)
  • 2 tbsp Anise seeds
  • 3 Yellow peaches
  • 2 tbsp Fruit jam (your choice) (your choice)
  • 1 tsp Ground Cinnamon

Instructions

  • With the blades on, pour the water, flour, oil, aniseed and 1 tablespoon of sugar into the mixing bowl and program 3 minutes, speed 1, without temperature (“Knead” program). When ready, roll out the dough on a baking paper and with a rolling pin, give it a rounded shape.
  • Spread the two spoonfuls of jam on top of the base and sprinkle 2 spoonfuls of sugar on top, leaving two fingers free on the edge so that it can be folded over later.
  • Fill the base with the sliced peaches and sprinkle the rest of the sugar and cinnamon on top.
  • Fold the pastry over itself to close the edge.
  • Place in a preheated oven at 180ºC and bake at that temperature for about 30 minutes or until it begins to brown.
