Ingredients

  • 3/4 cup unsweetened coconut cream
  • 1/2 cup sugar
  • 1 1/2 tablespoons instant coffee
  • 1 cup rice milk
  • 1 teaspoon vanilla extract

Instructions

  • Start by whipping the unsweetened coconut cream in a large bowl until smooth. Then, add the remaining ingredients and continue whisking until the mixture is well combined and the sugar has completely dissolved.
  • Pour the ice cream base into the ice cream maker container. Place the lid on and freeze for at least 24 hours before serving.

After 24 hours:

  • Remove the container from the freezer, take off the lid, and place it in the machine.
  • Select the ICE CREAM mode.
  • Once ready, you can add extra ingredients such as chopped nuts, chocolate chips, or process again until a creamier texture is achieved.

Notes

If your ice cream has a grainy texture due to a very low freezing temperature, don’t worry. Select the RE-SPIN option to process the mixture once more. This additional step will help smooth the texture and achieve a creamier consistency. However, it is important to note that this option is only recommended if you are not going to add extra ingredients.
