Scallops in sauce

Zamburiñas are a type of mussel, similar to scallops, and are very popular not only in Galicia but also in other parts of Spain for their fresh taste and delicate texture. It’s a perfect dish for the Christmas holidays, and with your Chefbot touch, you can serve them with a butter-based sauce and a hint of lemon that will delight both adults and children. Prepare this succulent delicacy, and don’t forget the toast!

Ingredients

  • 6 scallops
  • 1 handful parsley
  • 1 tablespoon lemon juice
  • 1 pinch of salt
  • 100 g butter

Instructions

  • Place the knife accessory in the mixing bowl of the Chefbot Touch and in the meantime, in a non-stick pan without oil, lightly fry the scallops that have previously been removed from their shells. Once cooked, set the scallops aside in their own shell.
  • Add a handful of parsley leaves and programme 10 seconds on speed 10 to chop the parsley.
  • Add the juice of 1 lemon (not too big) and a pinch of salt.
  • Program 10 seconds on speed 2 to mix the ingredients.
  • Place 100 g butter in a saucepan and cook over a medium heat for 3-4 minutes, stirring constantly with a whisk, until the butter turns a golden brown colour.
  • set the Chefbot Touch on speed 3 with no timer and, with the lid open, add the toasted butter in a trickle until an emulsion forms.
  • Pour the warm emulsion over the scallops and serve immediately.
