A coffee cake without an oven is possible, and it is also delicious. This version of the cake can be made in a single large size (24cm mould) or in individual cups to present it in a different way.

Ingredients

For the base

  • Maria biscuits (100 g)
  • Butter (75 g)
  • Cocoa powder (5 g)

Cheese cream

  • Liquid whipping cream 125 g
  • Natural yoghurt 125 g
  • Philadelphia type cream cheese 175
  • Sugar 60 g
  • Soluble coffee 5 g
  • Gelatine powder 8 g
  • Water 50 ml

For decoration

  • Liquid whipping cream ( 150 g)
  • Icing sugar (10 g)
  • Cocoa powder

Instructions

  • Crush the biscuits. Add the butter, previously melted, together with the cocoa powder. Mix well until you obtain a homogeneous dough and use it to line the base and sides of an 18 cm mould.
  • Whip the cream, which must be very cold, and set aside in the fridge. Beat the cheese with the sugar, add the yoghurt and the instant coffee. Stir to homogenise.
  • Mix the powdered gelatine with the water, stirring so that it hydrates well. If necessary, we can heat it in the microwave and continue stirring if necessary.
  • Mix the hydrated gelatine with the cheese mixture, little by little so that no lumps form. Add the reserved whipped cream and stir gently. Pour the mixture into the mould, level the surface and store in the fridge until it sets (about 4 hours, preferably overnight).
  • Just before serving, prepare the decoration. To do this, whip the cream (remember, well chilled) with a whisk and add the icing sugar. Put into a piping bag with a star nozzle and decorate. Sprinkle the surface with ground cocoa and serve.
