Ingredients
- 6 chicken thighs or drumsticks (skinless, optional)
- 1 large onion (finely sliced)
- 2 garlic cloves (minced)
- 1 teaspoon turmeric
- 1 teaspoon ground ginger
- ½ teaspoon cinnamon (optional)
- 1 handful of raisins or dried plums (about 30 g)
- 80 g green olives (preferably pitted)
- Juice of ½ lemon
- 2 tablespoons olive oil
- 200 ml water or chicken broth
- Salt to taste
- Fresh cilantro or parsley to serve (optional)
Instructions
- Rinse the olives, slice the onion, and prepare the spices.
- Place the chicken, onion, garlic, raisins, olives, all the spices, lemon juice, olive oil, and water or broth into the pot.
- Stir with a silicone or wooden spatula to evenly distribute all the ingredients. There’s no need to marinate beforehand, though you can do so if you have time.
- Close the lid, select the “Chicken” preset.
- Once the cooking time is finished, let the pressure release naturally for about 10 minutes before opening.
- Open carefully, stir the contents, and adjust the salt if needed.
- Serve hot, sprinkled with fresh cilantro or parsley and accompanied by couscous, rice, or bread.
