Ingredients

  • 6 chicken thighs or drumsticks (skinless, optional)
  • 1 large onion (finely sliced)
  • 2 garlic cloves (minced)
  • 1 teaspoon turmeric
  • 1 teaspoon ground ginger
  • ½ teaspoon cinnamon (optional)
  • 1 handful of raisins or dried plums (about 30 g)
  • 80 g green olives (preferably pitted)
  • Juice of ½ lemon
  • 2 tablespoons olive oil
  • 200 ml water or chicken broth
  • Salt to taste
  • Fresh cilantro or parsley to serve (optional)

Instructions

  • Rinse the olives, slice the onion, and prepare the spices.
  • Place the chicken, onion, garlic, raisins, olives, all the spices, lemon juice, olive oil, and water or broth into the pot.
  • Stir with a silicone or wooden spatula to evenly distribute all the ingredients. There’s no need to marinate beforehand, though you can do so if you have time.
  • Close the lid, select the “Chicken” preset.
  • Once the cooking time is finished, let the pressure release naturally for about 10 minutes before opening.
  • Open carefully, stir the contents, and adjust the salt if needed.
  • Serve hot, sprinkled with fresh cilantro or parsley and accompanied by couscous, rice, or bread.
