Fruitcakes are ideal for breakfast or for a snack. Today I propose a very juicy one that you will surely love. The truth is that I am fascinated by cherries. They are very healthy and delicious, so I assure you that you will not be able to resist.

Ingredients

For the cake

  • 3 medium eggs
  • 110 g Brown sugar
  • 15 g Vanilla paste
  • 180 g Wheat flour
  • 16 g Baker's yeast
  • Salt
  • 50 ml Oat drink
  • 120 g Melted butter
  • 100 ml Olive oil
  • 300 g Pitted cherries
  • 50 g Stoned cherries

For the oat and rum syrup

  • 25 ml Oat drink
  • 15 ml Rum

For cheese frosting

  • 300 g Sugar
  • 125 g Butter
  • 300 g Cream cheese

Instructions

For the cake

  • Put the whisk accessory in the Chefbot’s glass.
  • Add the eggs, brown sugar and vanilla paste. Set for 4 minutes at speed 3 and close the glass.
  • Mix the flour with the yeast and sift (strain these ingredients through a sieve to break them down into finer particles) and add a pinch of salt.
  • Then open the lid and add half of the previous mixture of flour and yeast. Set 1 minute and 30 seconds at speed 2 and close the glass.
  • Open again and add the rest of the flour and yeast mixture. Program 1 minute and 30 seconds at speed 2 and close the glass.
  • Open and add the 50 ml of oat drink and 120 g of melted butter. Set for 3 minutes at speed 2 and close the glass.
  • Grease a 20x20x6 cm baking tin with olive oil and place baking paper on the base. Pour the mixture into the mould. Spread the pitted cherries on top and sprinkle with sugar.
  • Preheat the oven up and down to 220ºC for 8 minutes.
  • Lower the temperature to 180ºC and leave the heat just below.
  • Bake for 30 minutes (the time will depend on each oven) until golden.
  • Take out and brush with the oat drink and rum mixture from below. Leave to cool before removing from the mould.

For the oat and rum syrup

  • Mix the 25 ml of the oat drink with the 15 ml of rum.

For cheese frosting

  • Put the blade accessory in the cup. Add the sugar and program 40 seconds at speed 10.
  • Add the butter (at room temperature) and program 1 minute at speed 4.
  • Open the lid and use the spatula to push down what has been stuck to the walls of the glass.
  • Add the cream cheese and program 1 minute at speed 4.
  • Once the cake has been removed from the mould, add the cheese frosting on top and finish by decorating it with whole cherries with stone.
