All the flavour of the east can be enjoyed in this dish: spiced beef skewers accompanied by a yoghurt and cucumber sauce. Serve with a salad for a complete meal.

Ingredients
- 450 g of beef mince
- 4 sprigs of coriander
- ½ a n orange peel
- 15 leaves of mint
- ½ a green chilli
- 75 g of feta cheese
- 50 g of fresh onion
- ½ a teaspoon of cumin
- 1 teaspoon of salt
- Pepper to taste
For the sauce:
- 125 g of seedless cucumber
- 175 g of Greek yoghurt
- ½ a clove of garlic
- ½ a tablespoon of white wine vinegar
- Salt
- Pepper
Instructions
- Insert the blade attachment, add the cucumber to the jug and program 5 seconds at speed 5. Transfer to the basket, add a pinch of salt and leave to drain. Rinse and dry the jug and continue with the blade attachment in place.
- Add the orange zest, coriander leaves, 8 mint leaves and the chilli. Program 10 seconds at speed 6. Push the ingredients down to the bottom of the jug.
- Add the minced meat and program 15 seconds, reverse speed 4. Transfer to a bowl and set aside.
- Without washing the jug, add 45 g of the yogurt, the feta cheese, the spring onion, the cumin, one teaspoon of salt and a pinch of pepper. Program 10 seconds at speed 5.
- Add the meat back in and program 20 seconds, reverse speed 3. Remove and divide into about 10 balls of 70 g each. Chill in the fridge for 30 minutes.
- Wash the jug and blades, dry and reinsert.
- Add the garlic and the remaining mint leaves. Program 5 seconds at speed 6. Scrape down the sides.
- Add the remaining yogurt, olive oil, vinegar, a pinch of salt and a pinch of pepper. Program 10 seconds at speed 3. Add the cucumber and stir with the spatula. Transfer to a bowl.
- Shape each meat ball into a cylinder and thread onto a wooden skewer. Cook on a griddle with a little oil and serve with the sauce.
