Carrot and orange cream

The best thing about this cream is the freshness and citrus point that brings the orange juice to a slightly caramelised carrot and onion. As it does not contain potatoes, it has a very light texture, which can be made even lighter by adding more water if we are going to drink it cold, and the creaminess of the avocado makes it mellow without adding any dairy. We can take it as it is or with a topping of cured cheese, diced ham or a little cucumber marinated in lemon juice for a couple of hours.

Ingredients

  • 10 medium sized carrots (about 700 g)
  • 1 medium onion (about 150 g)
  • 5 tablespoons of olive oil (75 ml)
  • 1 tsp fresh thyme (or half dried (3 g or 1.5 g))
  • 150 g of water (and 150 more if you are going to drink it cold)
  • 300 g natural orange juice
  • 1 large avocado (about 150 g without skin or stone)
  • Salt
  • Pepper

Instructions

  • Put the blade accessory in the cup. Add the onion, peeled and cut into 8 pieces, the carrots, peeled or washed with a brush until they lose all the soil, without the base of the stem and cut into pieces, salt and a little pepper. Program 15 seconds at speed 6 and close.
  • Open the Chefbot and use the spatula to push down anything that may have stuck to the walls: everything does not need to be well chopped. Remove the blade accessory from the glass and insert the stir paddle accessory. Add the 75 ml of olive oil (or 60 ml) and a little salt and pepper. Set for 15 minutes at 100ºC, speed 1 and close.
  • Open the Chefbot or add the 200 ml water and thyme leaves through the steam outlet cap. Set for 20 minutes at 100°C, speed 2 and close.
  • When the programme has finished, carefully open the Chefbot, remove the stir paddle accessory and insert the blade accessory. Add the 300 ml of orange juice and the flesh of the avocado (if it is to be taken cold, an additional 150 ml of water can be added). Set for 2 minutes at speed 10 and close.
  • Open and, taking care not to burn yourself, taste the cream and adjust the salt and pepper. If you are looking for a finer texture, add a one minute cycle at speed 10. Open the Chefbot and serve the cream if you want to drink it hot (if you want to drink it cold, wait for it to cool down, put it in an airtight container and take it to the fridge). Finish with a cheese topping, diced ham or cucumber pickled in lemon (ideal to enjoy it cold).
