Baracoa sorbet

How many summers have we dreamed of swinging in a hammock on the beaches of Cuba! Enjoying its climate, warmth and above all the taste of its fruits. This sorbet will give you the sensation of bathing in the Bay of Baracoa, Cuba. It has nothing but fruit and is so creamy that you won’t be able to stop eating it. So, shall we go for a taste of Cuba? 1 very ripe mango

Ingredients

  • 1 very ripe mango
  • 100 g passion fruit pulp
  • 1 ripe banana
  • 2 tbsp grated coconut

Instructions

  • Cut the fruit into small pieces. Freeze the fruit pieces for 8 hours.
  • Turn on the Helaki. Place a bowl on the food spout. Pull out the plunger.
  • Add the ingredients little by little, first a few pieces of mango and banana, then a spoonful of passion fruit pulp and finally a teaspoon of shredded coconut. Press the plunger down as it empties. Repeat the same process until all the ingredients have been used.
  • Serve with grated coconut and a few mint leaves.
