RAW RADISHES WITH INFUSED HERB BUTTER

Crunchy, fresh and full of nuances, these raw radishes are coated in an aromatic butter made from herb-infused oil. The result is bright, vegetal and delicate, a perfect contrast between intensity and smoothness.

Ingredients

  • 1 bunch of fresh radishes (with leaves if they are in good condition)
  • 60 g butter at room temperature
  • 80 ml mild olive oil
  • 1 tablespoon fresh chives
  • 1 tablespoon fresh cilantro
  • 4 –5 sage leaves
  • 4 –5 basil leaves
  • Flaky salt to taste

Instructions

  • Wash the radishes carefully and dry them very well. Trim the root slightly if necessary and keep part of the stem and some leaves. Cut the larger ones in half and leave the smaller ones whole. Set aside.
  • Place the olive oil, chives, cilantro, sage and basil in the blender jar. Blend for 40–60 seconds at high speed until the oil turns completely green and the herbs are finely blended.
  • Let it rest for 5 minutes so the oil finishes infusing and the aroma intensifies.
  • Strain the oil lightly if you prefer a smoother texture, or use it directly for a more rustic finish.
  • In a bowl, mix the room-temperature butter with 2–3 tablespoons of the infused oil. You can blend it with the FULLMIX for 20 seconds at medium speed until you obtain a smooth, glossy and slightly airy butter. Adjust the salt if necessary.
  • Arrange the radishes on a serving plate and gently coat them with the herb butter.
  • Finish with a pinch of flaky salt and serve immediately.
