There’s nothing better than an ice-cold lolly on a hot day. But have you ever tried a waffle ice lolly? They’re an easy snack that are not only fun to make, but also great fun to eat. You can also change the flavour with all sorts of different toppings.

Ingredients

  • 240 g of flour
  • 1 tablespoon of baking powder
  • ½ teaspoon of salt
  • 2 tablespoons of sugar
  • 2 large eggs (separate the white from the yolk)
  • 395 ml of milk
  • 80 g of melted butter or oil
  • 1 tablespoon of vanilla extract

Instructions

  • Pre-heat the waffle maker. Mix the flour, baking powder, sugar and salt in a large bowl.In a separate bowl, mix the egg yolks, milk, butter and vanilla extract. Leave this mixture to rest.In a medium-sized bowl, whisk the egg whites with a blender on medium-high speed until soft peaks form.Mix the dry ingredients with the egg yolk mix, stirring well. Then fold in the egg whites using a spatula.Pour a large tablespoon of the mixture into the waffle maker. Add an ice lolly stick in the right place, pour on some more of the mixture and close the lid.Let it cook for 3-5 minutes or until golden brown.Finally, you might want to decorate it with our favourite toppings. Ready to go!
