- 400 g very fresh bluefin tuna (sashimi grade)
- Zest of 1 lime
- Juice of 1 lime
- Juice of ½ grapefruit
- Juice of ½ orange
- 3 tablespoons extra virgin olive oil
- Flaky salt
- Freshly ground black pepper
- Edible flower petals
- Black caviar for serving
Instructions
- Cut the tuna into small, thin and uniform slices using a very sharp knife. Keep chilled.
- In the blender jar, add the lime, grapefruit and orange juice together with the olive oil and a pinch of salt.
- Emulsify with the Fullmix at high power until the vinaigrette becomes slightly thick and well combined.
- Arrange the tuna on a plate and pour the vinaigrette over it.
- Finish with lime zest, black caviar and edible flowers.
