TOAST WITH PEACH, TOMATO, BURRATA AND BASIL

If we had to describe summer and freshness in one dish it would be these toasts. The flavours combine to perfection, creating the sensation of a “trip to the Mediterranean” in a single bite.

Ingredients

  • 1 peach
  • 1 tomato (Monterrosa type)
  • 1 burrata
  • 1 slice of bread
  • A couple of basil leaves
  • Coarse salt

Instructions

  • Cut the peach into eighths and roast in the pan until toasted on both sides.
  • Toast the slice of bread with a little olive oil our pan until golden brown on both sides.
  • Cut the tomato into small squares and season with oil and salt.

To prepare the toast:

  • Put the toast a plate and place the sliced burrata on it.
  • Add a few pieces of roasted peach and the diced tomato.
  • Add basil leaves , coarse salt and a drizzle of oil to taste.
