- 5 carrots
- A drizzle of olive oil
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp ginger
- A drizzle of honey
- For the sauce
- 1 Greek yogurt
- Zest of 1 lemon
- Juice of 1 lemon
- 1 tbsp tahini
- Sliced almonds
- Pumpkin seeds
- Raisins
- Salt
Instructions
- Peel the carrots and cut them in half lengthwise. Season with oil, salt, pepper, garlic powder, and ginger.
- Place in the air fryer, drizzle with honey, and cook at 180°C for 30 minutes.
- Meanwhile, prepare the sauce: mix yogurt with lemon zest, lemon juice, tahini, and salt. Set aside.
- To serve, spread the sauce on a plate, place the carrots on top, and sprinkle with almonds, pumpkin seeds, and raisins.
