Roasted Carrot Salad

Tender, caramelized carrots paired with a creamy sauce and a crunchy mix of nuts. A warm salad full of flavors and textures.

Ingredients

  • 5 carrots
  • A drizzle of olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp ginger
  • A drizzle of honey
  • For the sauce
  • 1 Greek yogurt
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 tbsp tahini
  • Sliced almonds
  • Pumpkin seeds
  • Raisins
  • Salt

Instructions

  • Peel the carrots and cut them in half lengthwise. Season with oil, salt, pepper, garlic powder, and ginger.
  • Place in the air fryer, drizzle with honey, and cook at 180°C for 30 minutes.
  • Meanwhile, prepare the sauce: mix yogurt with lemon zest, lemon juice, tahini, and salt. Set aside.
  • To serve, spread the sauce on a plate, place the carrots on top, and sprinkle with almonds, pumpkin seeds, and raisins.
