There is nothing more comforting than a delicious stew to combat the cold. We know that stews and creams are all very well, but where there’s a good fish stew, all the rest goes.
Ingredients
- 1 onion
- 2 cloves of garlic
- 50 ml olive oil
- Salt to taste
- 1 tomato
- 400 g potatoes for boiling
- 200 g carrots
- 1 teaspoon of sweet paprika
- 100 ml of white wine
- 1 litre of water (approximately)
- 200 g of crushed tomato
- 8 slices of hake cut into cubes
- 400 g of clams
- Parsley (optional)
Instructions
- Chop the onion and garlic
- Poach the onion and garlic in a saucepan with oil.
- Add a grated tomato
- Peel and chop the potatoes and carrots.
- Add the latter to the poached vegetables along with the paprika and white wine. Cook until the alcohol in the wine is reduced.
- Pour in the water to cover the potatoes and cook for 20-25 minutes. Add salt to taste
- Add the crushed tomato
- Salt the pieces of hake
- Place the pieces of hake and clams on top of the potatoes and cook for 10 minutes.
- Add parsley
- Serve the stew hot
