Ingredients
- 4 large egg yolks
- 1 tablespoon honey
- 1/4 + 1 tablespoon granulated sugar
- 1 cup whipping cream
- 1 cup whole milk
- 1 whole vanilla bean (split lengthwise and scraped)
Instructions
- In a small saucepan, mix the egg yolks, honey, and sugar. Whisk until everything is fully combined and the sugar has dissolved.
- Add the cream, milk, and vanilla to the saucepan, making sure all ingredients are well incorporated.
- Place the saucepan over medium heat and begin stirring constantly with a whisk or spatula. Continue cooking while monitoring the temperature with a thermometer until it reaches between 74°C and 79°C.
- Once the desired temperature is reached, remove the saucepan from the heat and strain the mixture through a fine sieve into the ice cream container.
- Place the container in an ice bath to cool it quickly. Once cooled, place the lid on and transfer it to the freezer for at least 24 hours before serving.
After 24h
- Remove the container from the freezer, take off the lid and place it in the ice cream maker.
- Select the GELATO mode.
- Once the process is complete, you can add extra ingredients to your ice cream or simply remove it from the container and serve immediately.
Notes
If your ice cream has a grainy texture due to a very low freezing temperature, don’t worry. Select the RE-SPIN option to process the mixture again. This additional step will help smooth the texture and achieve a creamier consistency. However, it is important to note that this option is only recommended if you are not adding extra ingredients.
