Sweet potato stuffed with vegetables

Sweet potatoes, from the potato family, are one of the star foods of autumn, very rich in vitamin Cy and slightly sweet, making the contrast with another salty food an explosion of flavour. The sweet potato is very easy to prepare, it can almost be baked on its own, you can add a multitude of different vegetables and to finish, if you want to gratin it with cheese on top, it will be even tastier.

Ingredients

  • 300 g sweet potato
  • 50 g Green pepper
  • 50 g Red pepper
  • 100 g Carrot
  • 100 g Pumpkin
  • 2 cloves Garlic cloves
  • 100 g Onion
  • Salt (to taste pinch of salt)
  • 50 g Extra virgin olive oil

Instructions

  • Preheat the oven to 200º.
  • Wash the skin of the sweet potato well. Cut it in half lengthwise.
  • Place the sweet potato on a baking rack or baking tray on a piece of parchment paper, face down.
  • Wash and cut the onion, garlic and peppers into small pieces.
  • Insert the blade into the Chefbot. Add the vegetables and the cherry tomatoes. Program 10 seconds on speed 5.
  • Change the accessory to the stirring paddle.
  • Add the olive oil, carrot and diced pumpkin.
  • Program 20 minutes at 100º and speed 1.
  • Check the sweet potatoes in the oven. They will take about 30 minutes to roast (check if they are soft by pricking them with a fork).
  • When the time is up, open the Chefbot carefully. Check the saltiness.
  • Serve half a sweet potato with vegetables on top.
