Ingredients
To prepare the rice, we recommend following the sushi rice recipe available on Create’s blog.
For the topping:
- 200 g of salmon
- ½ a vocado (sliced)
- 1 tablespoon of plain Greek yogurt (unsweetened)
- 1 tablespoon of spicy mayo or kimchi
- 1 teaspoon of chopped chives
- 1 teaspoon of lemon juice
- Salt and pepper to taste
- Sesame seeds (optional)
Instructions
- Once the rice is prepared, mix it with rice vinegar, sugar, and salt, then add it to the cooked rice. Let it cool completely.
- Place the salmon in a steamer or on a metal strainer over boiling water. Cover and steam for 6–8 minutes or until cooked but tender.
- Let it cool slightly and shred it with a fork.
- In a bowl, mix the shredded salmon with yogurt, spicy mayo, chives, lemon juice, salt, and pepper.
- Cut the avocado into thin slices.
For the rice bites:
- With wet hands or using a mold, form small compact rectangles or discs of rice (approximately 1.5 cm thick).
- You can refrigerate them for at least 30 minutes (or freeze for 10 minutes) to help them hold their shape. This step is optional; if you’re in a hurry, you can place them directly in the air fryer after forming the rectangles.
- Preheat the air fryer to 200°C (390°F) for 3 minutes.
- Spray the rice blocks with oil or lightly brush them with vegetable oil.
- Cook in the air fryer for 10–12 minutes with the steam function activated, flipping them halfway through, until golden and crispy on the outside.
Plating:
- Place the avocado slices on the rice, then add a spoonful of the topping.
- Garnish with sesame seeds, more chives, or additional drops of spicy mayo if desired, and enjoy!
