Curry, sweet potato and red bean burgers

The combination of curry, sweet potato and red beans is delicious, the sweet potato’s sweet touch is complemented very well by the aromatic touch of the curry. These burgers are easy to prepare and delicious. I love to serve them with mustard sauce, tomato lettuce and seeded bread.

Ingredients

  • 390 g sweet potato
  • 60 g red onion
  • 1 clove of garlic
  • 15 ml olive oil
  • 300 g baked red beans
  • 1 teaspoon of curry
  • 1 teaspoon of salt
  • ½ teaspoon of pepper powder

Instructions

  • Peel the sweet potato and cut it into medium-sized pieces.
  • Open the Chefbot, place the stir paddle accessory, add the sweet potato and cover with 780 ml of water, close the Chefbot and cook at 100ºC for 15 minutes at speed 1 until soft.
  • Open the Chefbot, remove the water and set aside the sweet potato, which you will use later.
  • Place the blade accessory, add the onion and garlic, chop for 10 seconds at speed 6.
  • Open the Chefbot, replace the blade accessory with the stir paddle accessory, and push down with a spatula what may have stuck to the walls.
  • Add the olive oil, curry, salt and pepper, cook over a low heat at 100°C for 3 minutes at speed 1.
  • In a bowl mix the fried food that has just been prepared with the cooked beans and the sweet potato.
  • Mix with a fork until a dough is formed, and shape it into a hamburger, place on a baking tray suitable for the oven or on baking paper.
  • Cook them at 250ºC for 20 minutes until they are golden.
