Baba Ganoush or aubergine pate is a typical dish in Arab and Mediterranean cuisine. It’s somewhat similar to hummus and is also very easy to make. Perfect for dipping crudités or pita bread. A 100% plant-based recipe suitable for vegans and those with gluten, lactose and egg intolerance.

Ingredients

  • Aubergine: 300g
  • Garlic 1 clove
  • Extra virgin olive oil 25g
  • Lemon juice 10g
  • Tahini (sesame paste 35g)
  • Cumin powder ½ teaspoon
  • Salt 1 pinch
  • Paprika to taste

Instructions

  • Cut the aubergine in half and make several cuts in the flesh. Put a little olive oil and salt on each half and bake for half an hour in the oven, preheated to 200 degrees with top and bottom heat. Add the two peeled cloves of garlic.
  • Allow the aubergine to cool and separate the flesh from the skin with a spoon.
  • Combine the aubergine flesh with the oil, lemon juice, tahini, sesame, cumin, salt and garlic in the Chefbot glass with the blade accessory. Set for 30 seconds at speed 5.
  • Open the glass, use the spatula to scrape down any ingredients stuck to the sides and programme for another 15 seconds at speed 5. Repeat this step until you obtain the desired texture.
  • Serve with a little olive oil and paprika to taste.
