Ingredients

  • 1 kg beef suitable for stewing (chuck, shin or flank)
  • 1 large onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 ripe tomatoes or 200 g crushed tomatoes
  • 3 garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet paprika
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 500 ml beef stock
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • Season the beef with salt and pepper on all sides.
  • Select the Fast Cook programme, add the oil and brown the beef together with the chopped onion, sliced peppers and garlic.
  • Cancel the programme, release the pressure and open the lid.
  • Add the tomatoes, cumin, paprika, oregano and bay leaf.
  • Close the lid and select the Tendon programme on Soft mode. Start the programme.
  • Once finished, release the pressure and open the lid.
  • Remove the beef and shred it using two forks.
  • Return it to the pot and mix well with the sauce so it absorbs all the flavour.
  • Adjust seasoning if needed and serve hot.
