This light, colorful quiche combines fresh vegetables and cherry tomatoes in a soft, fluffy texture – easily cooked in the rice cooker. Perfect for a quick lunch or a light dinner.

Ingredients
- 4 large eggs
- 150 ml milk or cream
- 50 g grated cheese (cheddar, gruyere, or mozzarella)
- 1 cup chopped vegetables (bell pepper, zucchini, spinach, broccoli, as preferred)
- 10 –12 cherry tomatoes (halved)
- 1 tbsp olive oil
- Salt and pepper to taste
- Optional: fresh or dried herbs (oregano, thyme, basil)
Instructions
- Set rice cooker to “quick cook” and lightly grease the base and sides with olive oil.
- In a bowl, whisk eggs with milk or cream, season with salt, pepper, and herbs.
- Add grated cheese and chopped vegetables, mixing well.
- Pour mixture into rice cooker, arrange cherry tomatoes evenly on top.
- Close lid and cook 25–35 mins, checking from 25 mins; quiche is done when a toothpick comes out clean.
- Let rest 5 mins before serving or serve directly from rice cooker.
