Ingredients

  • 4 large eggs
  • 150 ml milk or cream
  • 50 g grated cheese (cheddar, gruyere, or mozzarella)
  • 1 cup chopped vegetables (bell pepper, zucchini, spinach, broccoli, as preferred)
  • 10 –12 cherry tomatoes (halved)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional: fresh or dried herbs (oregano, thyme, basil)

Instructions

  • Set rice cooker to “quick cook” and lightly grease the base and sides with olive oil.
  • In a bowl, whisk eggs with milk or cream, season with salt, pepper, and herbs.
  • Add grated cheese and chopped vegetables, mixing well.
  • Pour mixture into rice cooker, arrange cherry tomatoes evenly on top.
  • Close lid and cook 25–35 mins, checking from 25 mins; quiche is done when a toothpick comes out clean.
  • Let rest 5 mins before serving or serve directly from rice cooker.
