Let’s be honest: you’ve probably fallen for the famous mortadella and pistachio focaccia. But this version with potato, red onion, and one of the best cheeses (no, Stracciatella isn’t just ice cream) is one you’ll love.

Ingredients
- 400 g type 0 flour
- 7 g baker’s yeast
- 1 tsp sugar
- 10 g salt
- 2 tbsp extra virgin olive oil
- 2 red onions
- 280 g water
- 2 potatoes
- 100 g stracciatella cheese (rosemary, thyme, sea salt flakes…)
Instructions
- In a large bowl, add flour, yeast, sugar, and lukewarm water. Mix, then add oil and salt. Mix vigorously and let rest for 2h in a warm place.
- Using a mandoline, slice onion and potatoes very thinly.
- Once dough has doubled in size, transfer to a greased baking tray and gently spread to edges. Rest 20 minutes.
- Add red onion on top and let rest another 20 minutes.
- Layer the thin potato slices on top, drizzle olive oil, sprinkle salt flakes, and bake in a preheated pizza oven at 250 °C for 13–18 minutes until golden and potatoes are cooked.
- Cool for 10 minutes, then spoon Stracciatella on top and enjoy.
