Tomato and Strawberry Bruschetta

The classic Italian bruschetta is reinvented with the sweet touch of strawberries. A fresh, creamy bite full of contrasts that surprises with every mouthful.

Ingredients

  • 250 g cherry tomatoes
  • 150 g strawberries
  • A drizzle of olive oil (EVOO)
  • Salt
  • Pepper
  • Oregano
  • Garlic powder
  • 200 g mascarpone
  • A drizzle of honey
  • 1 large slice of bread

Instructions

  • Quarter the cherry tomatoes and strawberries, and place them in the air fryer basket. Add the drizzle of oil and all the spices (except mascarpone and bread).
  • Cook at 200 °C for 12 minutes, stirring halfway through so the fruit cooks evenly.
  • Meanwhile, toast the bread and prepare the mascarpone by stirring it well with a pinch of salt.
  • Spread the mascarpone on the toast and top with the roasted tomatoes and strawberries.
  • Drizzle with honey and enjoy this delicious toast.
