These lamb cutlets turn crispy on the outside and juicy on the inside thanks to the pistachio coating, which gives them a special, festive flavour. Served with roasted vegetables, they make a light yet celebratory dish.

Ingredients
- 6 lamb cutlets or small lamb ribs
- 80 g crushed pistachios
- 1 tablespoon mustard
- 1 tablespoon honey
- Salt and pepper
- Vegetables of choice (carrot, courgette, onion, chopped)
Instructions
- Mix the honey with the mustard and brush it over the lamb.
- Coat with the crushed pistachios, pressing gently.
- Place the vegetables in the Airfryer basket, season with salt and pepper and drizzle with a bit of oil.
- Add the lamb on top and cook at 180°C for 12–15 minutes.
- Serve hot with the juices released by the vegetables.
