PISTACHIO-CRUSTED LAMB WITH ROASTED VEGETABLES

These lamb cutlets turn crispy on the outside and juicy on the inside thanks to the pistachio coating, which gives them a special, festive flavour. Served with roasted vegetables, they make a light yet celebratory dish.

Ingredients

  • 6 lamb cutlets or small lamb ribs
  • 80 g crushed pistachios
  • 1 tablespoon mustard
  • 1 tablespoon honey
  • Salt and pepper
  • Vegetables of choice (carrot, courgette, onion, chopped)

Instructions

  • Mix the honey with the mustard and brush it over the lamb.
  • Coat with the crushed pistachios, pressing gently.
  • Place the vegetables in the Airfryer basket, season with salt and pepper and drizzle with a bit of oil.
  • Add the lamb on top and cook at 180°C for 12–15 minutes.
  • Serve hot with the juices released by the vegetables.
