Melon, avocado and basil smoothie

A refreshing smoothie packed with the healthy fats and creaminess contained in avocados. If the melon is a little bitter and you don’t want to add sugar or honey, you can add more lemon or a dash of vinegar, salt and pepper, making for the perfect cold soup as a starter or part of a light dinner.

Ingredients

  • 1 ⁄2 ripe Christmas melon (a little more if it is not very big (around 500 g,)
  • without the rind (in total))
  • 1 ripe avocado (around 200 g whole)
  • 8 basil leaves (plus an extra 4 to decorate)
  • A dash of honey (to adjust if the melon is a little bitter)
  • One tablespoon lemon juice (15 ml or to taste)
  • 200 ml iced water
  • 8 ice cubes

Instructions

  • Peel the melon, remove the seeds and cut it into medium pieces. Peel the avocado and remove the stone.
  • Place the blade attachment in the Chefbot workbowl and add the melon, the flesh of the avocado, 8 basil leaves (set aside 4 to decorate), the lemon juice, water and ice. Set for 1 minute at speed 9 and close.
  • Open the Chefbot workbowl, taste and, if necessary, add a little honey.
  • Set for 1 minute at speed 9 and close. Serve immediately decorated with a basil leaf or keep in the fridge until time to serve to keep it very cold.
