Burrata with roasted pear and pistachio nuts

We know that burrata with Pesto is a delight, but what if we add some lightly caramelised roasted pear and pistachios? We are sure that this “twist” will make you the perfect host.

Ingredients

  • 1 Burrata
  • 1 pear (the harder the better)
  • 1 handful of Pistachios
  • 1 tbsp brown sugar/honey
  • 1 tsp Salt
  • EVOO

Instructions

  • Put the spoonful of sugar in a frying pan and place over a medium heat until it starts to bubble.
  • Once it starts to bubble add the pear cut into half slices and a pinch of salt (if necessary add a teaspoon of water). Cover and leave to simmer for 3-4 minutes over a medium-low heat.
  • Once finished, transfer the pear to a plate, clean the frying pan and add the pistachios. Heat over high heat and give the pistachios a few hot strokes while stirring the frying pan.
  • Add the pistachios to the plate and place a buffalo mozzarella.
  • Add a dash of EVOO and a pinch of salt”.
