Ingredients

  • 2 medium ripe bananas
  • 1 cup of your preferred milk
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons sugar (optional)
  • 60 g butter
  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • A pinch of salt

Instructions

  • Peel the bananas and place them in a blender. If they are large, use one and a half to maintain the right consistency. The riper they are, the sweeter the batter will be.
  • Add the eggs, milk, sugar (if using), cinnamon, and vanilla extract. Blend until smooth.
  • Melt the butter and mix it into the blended mixture.
  • Incorporate the flour and baking powder. Stir with a spatula or whisk until just combined. Adjust with more flour or milk if necessary.
  • Let the batter rest for 5 minutes while preheating the waffle iron.
  • Grease the waffle iron and pour in the batter, avoiding overfilling. Cook until golden and crispy.
  • Once cooked, dip the waffles in white chocolate and sprinkle with dried mango. Enjoy!
