A manteiga clarificada, conhecida na cozinha indiana como ghee, tem in\u00fameras aplica\u00e7\u00f5es gastron\u00f3micas, tanto na cozinha doce como salgada. Ao submeter este ingrediente a cozedura a baixa temperatura conseguimos eliminar as suas impurezas e res\u00edduos (basicamente case\u00edna, a\u00e7\u00facares e outros s\u00f3lidos do leite, bem como \u00e1gua) que s\u00e3o o que provoca a queima da manteiga quando a utilizamos para fritar. Al\u00e9m disso, durante este processo, a manteiga adquire um sabor muito peculiar, ligeiramente torrado e semelhante ao de uma noz.<\/div>\n <\/div>\n \n
