Pour que cela fonctionne, il est essentiel que nous ayons une bonne connaissance de notre four. Chacun est un monde et la diff\u00e9rence entre un lent et un tr\u00e8s puissant peut aller jusqu\u2019\u00e0 10 degr\u00e9s au-dessus ou en dessous de la temp\u00e9rature que nous fixons, ce qui est particuli\u00e8rement sensible avec la p\u00e2tisserie, o\u00f9 ces 10 degr\u00e9s peuvent faire la diff\u00e9rence entre un g\u00e2teau \u00e0 point, un cru et un autre directement sec. Si nous savons comment fonctionne notre appareil , nous pouvons augmenter ou diminuer un peu le thermostat et nous rapprocher de la temp\u00e9rature r\u00e9elle. En cas de doute, et surtout si l\u2019on consid\u00e8re que l\u2019on ne pr\u00e9pare pas un g\u00e2teau qui va se d\u00e9gonfler, la meilleure chose \u00e0 faire est d\u2019ins\u00e9rer un cure-dent au centre du g\u00e2teau : il sera pr\u00eat quand il restera du beurre et quelques miettes (pas la p\u00e2te crue et humide).
